Chai Bits spiced tea infusion box
The best way to brew masala chai is to is to use fresh, whole spices and crush or grind them down to release their full flavours.
Masala chai can be made with any number of spices.
The usual staple ingredients are green cardamon, cloves, cinnamon & black peppercorn. You can also add star anise, allspice, dehydrated orange & fresh ginger (not included).
A lot of it is just a matter of personal taste more than what may or may not be considered correct.
Experiment with combinations until you land on one you love!

S U G G E S T E D R E C I P E
* 5 chips of star anise
* 5 whole cloves
* 4 - 5 whole allspice
* 5 chips cassia cinnamon bark or 1/4 cinnamon quill
* 4 whole black peppercorns
* 1 cardamom pod, opened to the seeds
* 1/4 slice dehydrated orange
* 1 cup water
* 1 cup milk
* 1 tablespoon Assam Tea leaves
* Honey, to taste
D I R E C T I O N S
Place the lightly crushed spices into the reusable muslin bag provided.
In a saucepan, bring one cup of water to simmering with your spice bag. Simmer gently for about 5 minutes, covered. Remove from the heat and stir in one cup of milk and one heaped table spoon of tea leaves. You can add these to the muslin bag or loose into the milk mix.
Place the pan with your milk added back on to heat, bring to simmer, then turn off the heat and allow the mixture to stand for a few minutes for the flavours to develop. Instead of milk, you can use any non-dairy milk of your choice, like coconut, almond, soy, oat, or any other kind of milk you like. Strain into a Chai mug. Stir in honey, a little at a time to taste. Serves 1.

Assam Tea is known for its rich, malty flavour, savory aroma and many potential health benefits.
Allspice is like a natural combination of mild cinnamon, cloves, nutmeg and pepper flavours.
Black Peppercorns have a sharp, penetrating aroma and a characteristic woody, piney flavour. It is hot and biting to taste.
Cardamom has a herbal warmth like a fragrant cross between Eucalyptus, Mint and Pepper.
Cinnamon has a sweet and woody flavour with a slight citrusy note and it’s spicy taste is often likened to the powerful punch of cloves.
The smaller chips are Cassia Cinnamon Bark, a slightly sweeter member of the same family.
Cloves are strong, pungent and sweet - almost hot. They are one of the most penetrating of all spices with their bitter, astringent flavour.
Dried Orange brings with it the sweetness of the dried flesh and the tartness of the citrus of the peel.
Star Anise has a strong anise flavour, with a liquorice-like aroma.
South Australian Blue Gum honey. A medium, rich, dense honey. 100% pure, unprocessed and naturally derived from the comb.
This honey is not blended or heat treated and as such may naturally candy. Warm to soften.
N.B. WESTERN AUSTRALIANS: Honey is an issue with quarantine laws, the Honey tube and wooden honey wand will be substituted with organic Cacao Nibs. This option is available to all states if requested.
